It's distilled using a sour mash process and bottled by the Heaven Hill-owned Dant Distillery Company in Bardstown
using three different varieties of sugar cane and is then matured for 3 years before being bottled
with the heads and tails of the resulting distillate being removed to focus on the heart — this labor-intensive process means that up to 30% more agaves are used in making Avión than in other ultra-premium tequilas
